“The Hundred Acre ‘Deep Time’ Cabernet Sauvignon 2015 spent 48 months in French oak barrels. Deep garnet in colour, it offers a profound fragrance of potpourri, star anise, sautéed herbs, rusty nails and cigar box, over a core of blackcurrant preserves and prunes, plus a waft of crushed rocks. The full-bodied palate is concentrated and satiny, offering exhilarating layers of of exotic spice and incense-spiked black fruit preserves, finishing with amazing length and depth. Hundred Acre ‘Deep Time’ Cabernet Sauvignon debuted in 2001 as an experimental cuvée exclusively available to the mailing list. Crafted by vintner Jayson Woodbridge, only a few barrels of this special Cabernet are produced each vintage. After aging for 48 months in barrel, it boasts a higher concentration compared to the regular vineyard designate cuvées. Remarkably, despite its extended aging, Deep Time avoids the pitfalls of excessive oak influence.

The Hundred Acre ‘Deep Time’ Cabernet Sauvignon 2015 originates from Woodbridge’s premier vineyard sites – Ark, Kayli Morgan, and Few & Far Between. This wine is characterised by its multi-layered complexity, commanding presence, and seamless integration, showcasing the hallmark flavours that Hundred Acre is renowned for blackberry, crème de cassis, cedar, and graphite, from the initial aromas to the enduring finish.
