Tasting Note
The wine has a gorgeous lemon verbena zingy freshness, citrusy and lightly grassy, with a chalky palate. When this wine is young, its nose is captivating and well developed, whereas the palate remains “tight,” still marked by the acidity. We would advise a few years of ageing (three to five years) for this wine to achieve a perfect balance.
Vineyards
This vineyard is in the hills above Vosne, and enjoys a cooler microclimate thanks to its 437m elevation. There is a tiny bit of Pinot Blanc grown amongst Chardonnay here. About this Wine
These vines were planted in the early 90s and are now well-rooted and must dig deep to get their nutrients which yields more concentrated juice. Grapes are harvested when they are very ripe but with a strong natural acidity! In youth, it is the nose that is very captivating and developed, while the mouth remains “tight”, but still marked by acidity. A few years of aging are recommended (3 to 5 years) so that the wine is completely balanced. Rare for most white wines, this is not filtered thus it needs time to settle in the bottle.
Vinification
Once the alcoholic fermentation is finished, the maturing process is both slow and fast at the same time: the wine expresses itself quickly, but in order to preserve its richness, it is important not to rush into bottling it. Indeed, we do not filter this wine (which is very uncommon for a white) and it therefore needs time to fall clear.
The Hautes-Côtes de Nuits Clos Saint Philibert comes from a monopoly located in the commune of Flagey-Echezeaux at an altitude of 380 meters. The Chardonnay vine was planted in the early 1990s. The vinification is traditional, the alcoholic fermentation takes place in barrels , with regular stirring .
